So, tl dr, it seems like it will be a great game, but obviously early access is, well, early access, and so it might be best to wait unless you really want to watch the game grow over time and are absolutely sure you'll love it. Animals don't die, as far as I can tell they don't really have any social behaviors, there's no predation, and there is no risk of animals escaping.
